Recipe Turkey burger with sweet potato chips INGREDIENTS:250g/ 9oz minced turkey; 100g/3oz breadcrumbs; 1tbsp chopped thyme; 1 egg; 50g/2oz cheddar; 1tbsp olive oil. For sweet potato chips: 500ml vegetable oil; 100g/3oz plain flour; 1tbsp curry powder; sweet potato, sliced very thinly METHOD: Preheat the oven to 200C/400F/ Gas 6. For the turkey burgers, place the mince, breadcrumbs, thyme, beaten egg and salt and freshly ground black pepper into a bowl and mix together well. Divide the turkey mixture into two and form each into a round. Form a hollow in each turkey round and stuff each with further ten minutes, or until cooked through. For the sweet potato chips, heat the oil in a deep, heavy-bottomed pan. The oil is ready when a breadcrumb dropped into it will sizzle gently. Mix the flour and curry powder together in a bowl. Dredge the sweet potato slices in the spiced flour, then carefully add the slices to the hot oil the grated cheddar, then push in the mince to cover the cheddar and seal the burger. Heat the oil in a frying pan over a medium heat. Add the turkey burgers and fry for two minutes on each side, until evenly browned, then transfer to the oven to cook for a to deep fry for 2-3 minutes, or until golden. Carefully remove with a slotted spoon and drain on kitchen towels.

To serve, place the turkey cheese burgers onto a plate and place the sweet potato chips alongside.
