INGREDIENTS: For the fresh fruit compote: 330g/12oz mixed blackcurrants, blackberries and raspberries; 100-150g/4-5oz caster sugar; dash of lemon juiceFor the rice pudding:: 120g/4 1/2 oz arborio rice (or pudding rice, or other short grain rice); 1l/1 3/4 pt milk (cream makes a richer version or mix half and half); 100g/ 1/ 4lb sugar; 1tbsp fresh lemon zest; 1 vanilla pod, split; 3 egg yolks; 3 egg whites; 50g/2oz caster sugar METHOD: Put berries in a small bowl, add the sugar and leave for at least an hour. Add a dash of lemon juice and set aside. Preheat oven to 150C/300F/Gas 2.
